Empanada Sunday

On Sunday our German teacher, Sara, threw a party for all of her students plus a few friends.  The goal was to work together to make empanadas, a dumpling-like specialty from Argentina.  Throughout the afternoon, party-goers took shifts in the kitchen, rolling and thinning the dough, stuffing the dough with a variety of yummy fillings, folding, and baking.  Needless to say, it was quite an operation!

We feasted upon several varieties throughout the day: beef, chicken, spinach, corn, ham and cheese, and vegetarian.  Did you notice that the flags were written in three languages?  German-English-Portuguese.  Amazingly, those languages didn’t even cover all of the people who were present at the party!  We still needed Chinese, Nepali, Hindi, Spanish, Finnish, and French!  I guess that makes the pretty flag too big. 😛

Sara’s little boy will eventually be able to read and understand all of the labels on those flags.  Amazingly, he already speaks German, Spanish, and Portuguese….and he’s 5!  He truly awed me as he turned to the crowd and automatically switched languages depending on the person.  To us he spoke German, and it was a great opportunity for me to practice speaking without feeling nervous or judged!

We brought guacamole (yum!) and American chocolate chip cookies to the party.  I never thought that regular-ole chocolate chip cookies would get such a response!  Therefore, anyone who is longing to send a package overseas, we just may need some chocolate chips and brown sugar. 😉

Let’s not forget that several steps in this process were already taken care of by the time we arrived at the party.  Big thanks to those who spent their Saturday making the dough and the filling—and chopping 7 Kilos of onions!  Next time, I’ll provide the tissues.  🙂

We took some yummy empanadas home with us, too  (If we must…hehe).  The next night we ate them alongside a delicious Mexican salad with honey-lime dressing.  I’m sharing it with you now because I loved it!  One note, I still had leftover guacamole from the party so I used that to substitute the avocado in the recipe.  Enjoy!

Mexican Chopped Salad with Honey-Lime Dressing

lettuce (romaine is best–it doesn’t get as soggy)

1 can kidney beans, rinsed and drained

3/4 C. chopped, seeded tomato

3/4 C. corn kernels, canned

Half a ripe avocado, diced

1 red bell peppers, chopped

1/4 C. crumbled Feta cheese

For the dressing:

1/4 C. fresh lime juice

1/4 C. olive oil (I used a little less)

2 TBSP honey

2 TBSP cilantro, fresh

1 garlic clove, minced

1 tsp. chopped jalapeno or chili pepper

Mix salad ingredients; Mix dressing thoroughly.  Pour dressing over mixture and toss.  Enjoy!
